2016
Downton, Salisbury
Hugo Stewart planted the vineyard at Botley’s Farm in 2016 after gaining experience at Les Clos Perdus in southern France. Domaine Hugo released its first English vintage in 2018.
Production remains deliberately small, with biodynamic farming in the vineyard and minimal intervention in the winery.
The vineyard lies on south-facing chalk downland at about 90 metres above sea level. It is planted with Chardonnay, Pinot Meunier, Pinot Noir, Pinot Gris and Pinot Blanc, and is certified organic and biodynamic.
Sheep graze between the vines in winter, while the headlands are left unmown to provide habitat for wildlife. A mixture of grasses, clover, legumes and herbs grows between the rows to support healthy soil.
WINEMAKER
Daniel Ham makes the wines at Botley’s Farm. The grapes are pressed slowly in a traditional basket press, and fermentation begins naturally with yeasts from the fruit.
The wine matures in used Burgundy barrels and clay amphora. It is moved by gravity and bottled without filtration. The current HUGO releases have no added sulphur and no dosage, giving them a distinctly dry style.

The current multi-vintage HUGO blends wine from the 2022, 2021 and 2020 harvests. Made without dosage, this is a distinctly dry traditional-method sparkling wine.
