Domaine Hugo is based at Botleys Farm near Downton in Wiltshire. The farm has been in Hugo Stewart’s family for five generations. After co-founding Les Clos Perdus in the Languedoc, Hugo brought that experience home and planted the vineyard in 2016. Its first vintage followed in 2018.
Hugo works with winemaker Daniel Ham of Offbeat Wines to make small-production sparkling wines that reflect the farm’s chalk soils. The estate is certified organic and biodynamic, with farming centred on healthy soils and biodiversity.
The south-facing vineyard sits around 90 metres above sea level on thin soils over Wiltshire chalk. Chardonnay, Pinot Noir, Pinot Meunier, Pinot Gris and Pinot Blanc grow here.
Sheep graze the vineyard, while unmown headlands and a diverse mix of grasses, clover, legumes and herbs support biodiversity. Careful pruning and hand harvesting help the team select ripe fruit.
WINEMAKER
Daniel Ham makes the wines on the farm using a traditional basket press and spontaneous primary fermentation with native yeasts. The wines mature in used barrels and clay amphora, with transfers by gravity and no filtration.
The range includes traditional-method Brut Nature sparkling wines and BOTLEYS, a semi-sparkling Col Fondo wine. Release-specific blends, ageing and availability are recorded on the individual wine profiles.
