Wendy and Charles Outhwaite founded Ambriel at Redfold Vineyards in West Sussex. Wendy tends the vineyard, while Charles leads the winemaking. Chardonnay, Pinot Noir and Pinot Meunier grow on the estate’s free-draining greensand soils.
Ambriel makes wine solely from its own grapes, harvested by hand close to the winery. Separate fermentations allow the team to blend individual parcels before bottle fermentation and extended ageing on the lees.
The estate’s vineyards sit on south-facing greensand slopes in West Sussex, planted with Chardonnay, Pinot Noir and Pinot Meunier for traditional-method sparkling wine.
WINEMAKER
Wendy grows the grapes and Charles leads fermentation, with both founders working together on the blends. Their estate-grown fruit is gently pressed on site, then individual clones are fermented separately in temperature-controlled stainless steel or aged oak. After blending and bottle fermentation, the wines rest on their lees for years before release.
